Red Beet Noodles

Is there anything better than spiralized red beet noodles? If there is, then we're yet to find it. Their earthy-sweet flavor make beets the perfect companion for lots of different ingredients—from nuts to fruit and even cheese—and their firm consistency and texture lends them beautifully to noodle form. Serve in a breakfast omelette, over a salad for lunch, or in a savory green pesto sauce for supper.
