Okra is a mild-tasting, squashlike little vegetable that makes everything it touches a little thicker. It's best known as the secret to gumbo's great texture. Steam or sauté okra for just a few minutes, or deep-fry it. It's crisp-tender with a clean, mild flavor. Be sure to not cook okra in iron, copper, or brass — it will turn the pods an unappetizing gray.
