How to cook a prime rib roast

A prime rib roast is the ultimate show-stopper for a special meal, and preparing it is simpler than you think: Remove the roast from fridge 1-2 hours before cooking. Place on a sheet or roasting pan and rub all over with olive oil or soft butter. Season well with coarse salt and pepper. Tuck rosemary and thyme sprigs under the roast and beneath the twine. Pre heat oven to 450 F. Once hot, place the roast in the oven. After 15 minutes lower the temp to 300-325 F, then check the internal temperature of the roast after an hour. You'll want to continue cooking until the outside is crusty and you reach 10 degrees below your desired internal temp on a thermometer: that's 115 for medium rare, or 125 for medium. Let rest at least 15 minutes before serving; internal temp will continue rise during this time. You can use the same method for beef filets and standing pork roasts, cutting the initial high heat time to 10 minutes and minimum roasting time to 35.
