These organic mussels from Newfoundland are grown on lines in deep water sites, in depths of 40 to 120 feet. The clear, icy waters in the area provide a pure, clean growing environment, and this pampered lifestyle leaves them nearly completely free of grit. Steam them in white wine with parsley, garlic and butter, or in a tomato-based broth. Mussels make a classic pairing with pommes frites and a frosty glass of ale. Please note: while live mussels are usually closed, they do need to breathe, so you may find them slightly open, especially when not on ice. Squeeze the shell gently a few times and wait approximately a minute for a reaction. Discard if it does not respond by closing. What to do if your shellfish is open when you receive it: Shellfish will naturally 'gape' when out of water, meaning they naturally open and close their shells while in storage. If the shell remains "gaping", run cold, fresh water over the shell while tapping with a spoon or on a chopping board - in most cases it will close up tightly. If the shell still does not close, then your mussels may be spoiled.
