Wild Langoustines

With their delicate and complex flavor, langoustines are a true treasure of the sea. Caught in the deep cold waters of the North Atlantic or coastal New Zealand, they're similar to lobsters in appearance, but with a slightly sweeter taste. Prepare them simply by boiling them in salted water for two minutes, or splitting them lengthwise and grilling or roasting with butter and fresh tarragon. Enjoy with your favorite sparkling white wine for an elegant dinner. Keep in mind that although langoustines look similar to lobsters, their meat is found in the tail and not the claws. Because they are delicate, the front claws may fall off while in packaging, but no enjoyment will be lost.
